Always worth sharing

It has been a minute since I have baked anything. I was about to say, "it has been awhile since I have had the chance to bake", but that's a lie. I could have baked, but just wasn't inspired by anything.

However, I did bake a bit this past Sunday. It's always a Sunday thing for me. By the end of the weekend I don't want to do too much, but I want enjoy my downtime. That has been why baking has been exactly what I have needed.

So I made the crowd favorite, Blueberry Almond Lemon Cake. I made a double batch because I wanted to give a loaf to a client and bring the rest into the office. I think I altered the proportions of the ingredients slightly, and the loaf broke in half when I took it out of the oven :( I also forgot to put a timer on for about the first 10 minutes so I think that must have had something to do with it as well. I was going to throw it out, but I put the glaze on it and wrapped it up just in case. What I ended up doing was leaving it on the counter with a note for my roommate to bring it to work if she wanted. Apparently it was a hit because she sent me screen shots from her group chat at work where they were talking about it! This just showed me that I should always share the treats even if I don't think they are perfect. I think people are just happy to have something sweet when they aren't expecting it.

I used the rest of the batter to fill four small ramekins I bought recently. I also did not set a timer for these... but they came out much better than the loaf. I ended up eating one right off the bat, but managed to save the others for my co-workers. I added the glaze while they were still pipping hot and that was not ideal. But, they were still shareable!

The take away here is, always share when able.
